Cabbage and Carrot Slaw
This crunchy slaw combines thinly sliced cabbage and shredded carrots with lemon, olive oil, and a pinch of sugar. It's affordable, quick to make, and keeps well in the fridge.

- Rest or chill time 10 min

- Difficulty Easy
Raw cabbage is crisp with a slightly peppery bite. Slice it very thin and toss it with salt and lemon juice a few minutes before serving. It will soften slightly without losing its crunch.
The pinch of sugar doesn't make the slaw sweet; it balances the lemon's acidity and the cabbage's natural bitterness.

Tips for success
- Mixing red and green cabbage makes the salad more colorful. Red cabbage can stain the other ingredients, so mix it in just before serving.
- Raisins or diced pineapple add a sweet contrast.
- For a creamy version, replace the olive oil with 3 tablespoons of mayonnaise.
Substitutions
- Lemon juice
- Apple cider vinegar, in the same amount.
How to store
Once dressed, it keeps for 2 days in the fridge. Undressed sliced cabbage keeps for 4 days in an airtight container.
