This creamy chicken salad is a popular dish for holiday gatherings and Sunday lunches. It starts with cooked, shredded chicken mixed with thinly sliced raw vegetables and a mayonnaise dressing lightened with cream and lemon juice.
Green apple adds freshness and a crisp, tart bite that balances the dressing. Add the shoestring potatoes just before serving—they’ll soften if they sit in the dressing too long.

- Shredded rotisserie chicken is a great shortcut.
- If you don’t like raisins, swap them for chopped green olives.
Substitutions
- Heavy cream
- Plain yogurt makes the dressing lighter and tangier.
- Ham
- Diced turkey breast or hearts of palm.
