- Difficulty Easy
Creamy rice pudding gets its texture from the starch released by the rice. First, cook the rice with the spices in a little water until the grains begin to open. Then add the milk and simmer over low heat as the starch thickens the mixture. Stir in the sweetened condensed milk at the end for sweetness and a rich, caramel-like flavor.
Use regular white rice. Don’t rinse it: rinsing removes the surface starch that helps make the pudding creamy.

Equipment
- Pot
- Wooden spoon
Instructions
-
Step 1 Cook the rice in water
In a large pot, combine the rice, water, cinnamon stick, and cloves. Cook uncovered over medium heat until almost all the water has evaporated and the grains begin to open, about 10 minutes.
- 1 cup uncooked white rice
- 2 cups water
- 1 cinnamon stick
- 4 whole cloves
About 10 min
-
Step 2 Add the milk
Add the milk and reduce the heat to low. Cook for about 20 minutes, stirring occasionally so it doesn't stick to the bottom, until the rice is very tender and the liquid begins to thicken.
- 1 liter of milk
About 20 min
-
Step 3 Sweeten the pudding
Stir in the sweetened condensed milk and cook for another 10 minutes, stirring constantly. Turn off the heat when the pudding is creamy but still a little loose; it will thicken considerably as it cools.
- 1 can of sweetened condensed milk
About 10 min
-
Step 4 Serve with cinnamon
Remove the cinnamon stick and cloves. Serve warm or chill in the refrigerator, then sprinkle with ground cinnamon just before serving.
- ground cinnamon to taste
Tips for success
- If the rice pudding becomes too firm after chilling, stir in a little cold milk before serving.
- Add lemon zest with the cinnamon and cloves for an extra fragrant pudding.
- A large pot helps keep the milk from bubbling over.
Substitutions
- Sweetened condensed milk
- 1 cup sugar; the pudding will be less rich, so cook it for 5 minutes longer.
- Milk
- Replace up to half the milk with coconut milk for coconut rice pudding.
