The secret to juicy steak is a very hot skillet. High heat browns the surface in just a few minutes, creating a flavorful crust while keeping the inside tender. On low heat, the meat releases moisture and stews in its own juices, turning gray and tough.
Cook the onions afterward in the same skillet, using the browned bits left by the steaks. A splash of water loosens those bits and makes a quick pan sauce.
Ingredients
Amounts for 4 servings (4 steaks).
Equipment
- Knife and cutting board
- Frying pan
Instructions
-
Step 1 Season the steaks
Pat the steaks dry with paper towels so they brown better. Season with the garlic, salt, and black pepper.
- 4 top sirloin steaks
- 2 cloves of crushed garlic
- 1 teaspoon salt
- black pepper to taste
-
Step 2 Sear over high heat
Heat half the oil in a skillet over high heat until it starts to smoke. Add two steaks at a time and don't move them for 2 minutes. Flip and brown the other side for another 1 to 2 minutes. Transfer to a plate and repeat.
- 2 tablespoons oil
About 8 min
-
Step 3 Brown the onions
Reduce the heat to medium and add the remaining oil and the onion to the same skillet. Cook, stirring, for about 5 minutes, until softened and browned around the edges.
- 2 sliced onions
About 5 min
-
Step 4 Make the sauce and serve
Pour in the water and scrape the bottom of the skillet to loosen the browned bits. Return the steaks to the pan for 1 minute to warm through, then serve with the onions on top.
- 1/4 cup water
About 2 min
Tips for success
- Take the meat out of the refrigerator 20 minutes ahead of time. Cold steak cools the skillet and releases moisture.
- Thin steaks cook in seconds; the recipe timing is for steaks that are 1 cm thick.
- Cut small slits in the fat along the edges so the steaks don't shrink and curl.
Substitutions
- Top sirloin
- New York strip, top round, or eye of round; the last two are leaner and firmer.
- Water
- A splash of white wine or homemade beef broth for a more flavorful sauce.
How to store
Best served right away. Leftovers keep in the refrigerator for 2 days and make a great sandwich filling.
